St. Joseph’s day pastries

This year we celebrated by making the delicious cream puffs, eating pizza, and watching a movie.

I love the method for frying the dough! Pipe it onto parchment paper and place into the oil. As the dough fries, just remove the paper with tongs. I even reused some sheets after wiping the oil off.
I used my Dutch pot with 3 cups of oil, frying at at 360°F 2-3 minutes on each side.
Take them out when nice and brown, I put them on a rack to drip dry.
Be very careful with your custard, the recipe says to scald the milk in a pot. Bring the milk to a boil at 180°F for two minutes, make sure to stir constantly and always strain.
I subbed a vanilla bean for the lemon peel in my custard. Once cooked, pipe the custard between two dough rounds and on top. Add a cherry on top and dust with powdered sugar. 🤗
